  1. Heat a large nonstick skillet over medium heat. Lightly toast the brioche buns until golden and set aside.
  2. In a small bowl, mix mayonnaise, Dijon mustard, lemon zest, and juice. Season with salt and pepper to taste. Set aside.
  3. Wipe out the skillet and add olive oil over medium heat. Crack eggs into the skillet and cook sunny-side up until whites are set and yolks are runny, 3-4 minutes. In the last minute, top each egg with a slice of cheddar to melt slightly. Season with salt and pepper.
  4. Spread lemon-mayo on both sides of each toasted bun. Layer the bottom bun with arugula, a slice of tomato, sliced avocado, and a few rings of red onion.
  5. Place the cheesy egg on top of the veggies. Sprinkle with chives, then crown with the top bun.
  6. Serve immediately, with extra lemon-mayo on the side.
