Preheat a grill or grill pan over medium-high heat.
In a large skillet, heat butter and olive oil over medium heat. Add sliced onions, sprinkle with salt and pepper, and cook, stirring occasionally, until golden brown and caramelized, about 15-18 minutes. Set aside.
