Preheat oven to 400°F (or use a grill pan over medium-high heat).
Pat chicken breasts dry. In a small bowl, mix 1 tbsp olive oil, 1 tsp salt, black pepper, cumin, smoked paprika, and garlic powder. Rub all over chicken, then place on a lined baking sheet (or grill pan).
Roast or grill chicken for 18-22 minutes until cooked through (internal temp 165°F), flipping once. Let rest 5 minutes, then slice thinly.
While chicken cooks, make tzatziki: In a bowl, combine Greek yogurt, lemon zest, 1 tbsp lemon juice, grated garlic, cucumber, 1/2 tsp salt, and 1 tbsp olive oil. Stir and chill until serving.
Prep toppings: halve cherry tomatoes, slice onion, shred lettuce, crumble feta, halve olives, and chop parsley.
Warm pita bread in the oven for 3-4 minutes or wrap in a towel and microwave for 30 seconds.
Arrange sliced chicken, tzatziki, pitas, and toppings on a large platter or board. Let everyone assemble their own pitas, adding desired toppings and a squeeze of fresh lemon.
