  2. Pat the pork tenderloin dry with paper towels. Season all over with salt and pepper.
  3. In a small bowl, whisk together the apricot jam, Dijon mustard, soy sauce, minced garlic, olive oil, thyme, and apple cider vinegar.
  4. Heat a large oven-safe skillet over medium-high heat. Add a splash of olive oil and sear the pork on all sides until golden brown (about 2-3 minutes per side).
  5. Remove the skillet from the heat. Brush the pork generously with half of the apricot glaze.
  6. Transfer the skillet to the oven and roast for 15-18 minutes, or until the internal temperature reaches 145°F (63°C).
  7. During the last 5 minutes of roasting, brush the pork with the remaining glaze.
  8. While the pork roasts, toss the halved baby red potatoes with olive oil, rosemary, salt, and pepper. Spread them on a separate baking sheet and roast in the oven for 30-35 minutes, turning halfway through, until golden and crispy.
  9. Steam or boil the green beans until tender-crisp, about 4-5 minutes. Drain and set aside.
  10. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant, about 1 minute. Add the cooked green beans, season with salt and pepper, and toss to coat and warm through.
  11. Remove the pork from the oven and let rest for 5 minutes before slicing.
