Preheat oven to 425°F (220°C). Wash potatoes and prick all over with a fork. Rub each potato with olive oil and sprinkle with kosher salt.
Place potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, until skins are crispy and a fork easily pierces the flesh.
While potatoes bake, prepare toppings: steam broccoli, crumble turkey bacon, chop tomatoes, slice green onions, cube butter, and set out all toppings in small bowls.
When potatoes are done, let cool just enough to handle. Using a sharp knife, make a lengthwise slit in each potato and gently squeeze ends to open.
