In a small bowl, whisk together tamari, rice vinegar, ginger, garlic, tahini, water, sriracha, and maple syrup (or keto sweetener) until smooth. Set aside as the dressing.
In a large nonstick skillet, heat sesame oil and avocado oil over medium-high heat. Add tofu cubes and cook, turning occasionally, until all sides are golden and crisp, about 8-10 minutes.
Add edamame to the skillet and toss for 2-3 minutes until heated through.
Pour half the dressing over tofu and edamame, tossing to coat. Let it caramelize for 1-2 minutes, then remove from heat.
