Boil potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly.
Place potatoes on the baking sheet. Using the bottom of a glass, gently smash each potato to about 1/2-inch thick.
Drizzle potatoes with olive oil, then sprinkle with 1 tsp salt and black pepper. Roast for 18-22 minutes, flipping halfway, until golden and crisp.
