The star is a vibrant mango salsa—sweet, tangy, and just a touch spicy—layered on top. Using small portions and minimal waste, this dish is perfect for a tropical-inspired dinner for two. The colors and freshness will transport you straight to the islands.
Ingredients
Instructions
  1. Pat the fish fillets dry and place on a plate. Rub both sides with 1 tbsp olive oil, allspice, salt, and black pepper. Let marinate while preparing salsa.
  2. In a small bowl, combine diced mango, red bell pepper, red onion, lime zest, lime juice, cilantro, and chili (if using). Add 1 tbsp olive oil and toss gently. Taste and adjust seasoning as needed. Let sit for flavors to meld.
  3. Heat a nonstick or cast iron pan over medium-high. Add the marinated fish fillets and cook 3-4 minutes per side, or until golden and cooked through (should flake easily with a fork).
  4. Transfer the cooked fish to plates. Spoon generous mango salsa over the top of each fillet.
  5. Serve immediately, garnished with extra cilantro and lime wedges if desired.
