Form the ground beef into 4 equal patties, making a slight indent in the center of each. Season both sides generously with salt and pepper.
Heat a large skillet or grill pan over medium-high heat. Add vegetable oil. When hot, cook the patties for about 3–4 minutes per side for medium, topping each with a slice of cheddar during the last minute to melt.
