  1. In a small saucepan, combine heavy cream, milk, and sugar. Heat over medium until just steaming (do not boil).
  2. Remove from heat and stir in vanilla extract, sea salt, and chopped dark chocolate. Let sit 1 minute, then whisk until smooth.
  3. In a separate bowl, whisk egg yolks. Slowly pour in about 1/2 cup of the warm chocolate mixture, whisking constantly to temper the yolks.
  4. Pour the tempered yolk mixture back into the saucepan and whisk to combine.
  5. Return the saucepan to low heat. Stir constantly until mixture thickens slightly and coats the back of a spoon (about 5 minutes).
  6. If using, stir in bourbon.
  7. Divide crushed pretzels among four small ramekins or glasses. Pour chocolate mixture over pretzels, smoothing tops.
  8. Chill for at least 1 hour, until set.
  9. Before serving, drizzle with caramel sauce and sprinkle with flaky salt. Add extra pretzel pieces for garnish if desired.
