  1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment or lightly grease it.
  2. In a large bowl, combine ground turkey, spinach, carrot, onion, garlic, oats, egg, 2 tbsp ketchup, Worcestershire, salt, and pepper. Mix until just combined—do not overwork.
  3. Pack mixture evenly into the prepared loaf pan. Spread remaining 2 tbsp ketchup over the top.
  4. Bake for 30-35 minutes, until the meatloaf is cooked through (internal temp 165°F/74°C). Remove and let rest 5 minutes.
  5. Meanwhile, bring a large pot of salted water to a boil. Add cauliflower florets and cook until very tender, 10-12 minutes. Drain and return to pot.
  6. Add Greek yogurt, olive oil, and a pinch of salt and pepper to the cauliflower. Mash until smooth and creamy. Taste and adjust seasoning.
  7. Slice meatloaf and serve over a bed of mashed cauliflower. Sprinkle with parsley if desired.
