  1. Pat the chicken breasts dry. Sprinkle with 1 tsp salt and black pepper on both sides. Let rest while prepping vegetables.
  2. Place flour on a plate and lightly dredge both sides of the chicken in flour, shaking off excess.
  3. Heat olive oil in a large cast iron skillet over medium-high heat. Add chicken and cook until golden and just cooked through, about 5-6 minutes per side. Transfer to a plate and tent with foil.
  4. Reduce heat to medium. Add butter to the same skillet. Add red onion and both bell peppers. Sauté for 3 minutes until softened.
  5. Add zucchini and cherry tomatoes. Cook, stirring occasionally, for another 3-4 minutes until vegetables are vibrant and just tender.
  6. Stir in balsamic vinegar and honey. Scrape up browned bits from the pan. Simmer 2 minutes to create a glossy sauce.
  7. Return chicken (and juices) to skillet. Spoon sauce and veggies over chicken. Taste and adjust salt with up to 1 tsp more as needed. Simmer 1-2 minutes to warm through.
  8. Sprinkle torn basil over the top. Serve with lemon wedges for squeezing, and enjoy straight from the skillet for a festive, shareable dinner.
