Inspired by the viral Coldplay concert moment, this dish is a playful take on bittersweet situations: golden chicken (the 'main act') is paired with a vibrant array of veggies, symbolizing the colorful spectacle of a stadium crowd. A sweet-tart balsamic glaze mirrors the mix of emotions, while fresh basil and a bright squeeze of lemon add a final, optimistic note. Served family-style in one skillet, it’s perfect for sharing (or not) and sure to spark conversation.

Instructions
Pat the chicken breasts dry. Sprinkle with 1 tsp salt and black pepper on both sides. Let rest while prepping vegetables.
Place flour on a plate and lightly dredge both sides of the chicken in flour, shaking off excess.
Heat olive oil in a large cast iron skillet over medium-high heat. Add chicken and cook until golden and just cooked through, about 5-6 minutes per side. Transfer to a plate and tent with foil.
Reduce heat to medium. Add butter to the same skillet. Add red onion and both bell peppers. Sauté for 3 minutes until softened.
Add zucchini and cherry tomatoes. Cook, stirring occasionally, for another 3-4 minutes until vegetables are vibrant and just tender.
Stir in balsamic vinegar and honey. Scrape up browned bits from the pan. Simmer 2 minutes to create a glossy sauce.
Return chicken (and juices) to skillet. Spoon sauce and veggies over chicken. Taste and adjust salt with up to 1 tsp more as needed. Simmer 1-2 minutes to warm through.
Sprinkle torn basil over the top. Serve with lemon wedges for squeezing, and enjoy straight from the skillet for a festive, shareable dinner.
