  1. Pat steaks dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper. Let sit at room temperature for 15 minutes.
  2. Heat a large heavy skillet (cast iron preferred) over high heat until very hot and just beginning to smoke. Add oil and swirl to coat the pan.
  3. Carefully place steaks in the pan. Sear without moving for 2-3 minutes, until a deep brown crust forms. Flip and cook for another 2-3 minutes for medium-rare (adjust time for desired doneness).
