In a large skillet, heat 2 tbsp olive oil over medium heat. Add the ground lamb and cook, breaking it up with a spoon, until browned and cooked through, 5-6 minutes. Transfer lamb to a plate and set aside.
In the same skillet, add remaining 1 tbsp olive oil. Add diced onion and bell pepper, and sauté for 3-4 minutes until softened.
Add garlic and cook for 1 minute until fragrant. Stir in smoked paprika, cumin, and oregano, and cook for another 30 seconds to bloom the spices.
Return the lamb to the skillet. Add chickpeas, cherry tomatoes, and olives. Stir to combine, season with salt and pepper, and cook for 5-7 minutes, letting the tomatoes soften and flavors meld.
