  1. In a bowl, whisk together 1 tbsp olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts, turning to coat. Marinate for 10-15 minutes while prepping vegetables.
  2. Drizzle zucchini, bell pepper, onion, and cherry tomatoes with remaining 1 tbsp olive oil and a pinch of salt.
  3. Preheat your flat grill (griddle or outdoor flat top) to medium-high heat. Lightly oil the surface if needed.
  4. Grill chicken breasts for 4-5 minutes per side, until golden and cooked through. Transfer to a plate and tent with foil to rest.
  5. Add vegetables to the grill. Cook for 5-7 minutes, turning occasionally, until charred and tender-crisp. Remove from grill.
  6. Warm pita breads or flatbreads on the grill for 1-2 minutes per side, just until soft and slightly toasted.
  7. Slice chicken thinly. Arrange grilled chicken and veggies over warm flatbreads. Sprinkle with feta and fresh herbs. Serve with a dollop of Greek yogurt on the side if desired.
