  1. Pat chicken breasts dry and place in a bowl. Add 2 tablespoons olive oil, juice and zest of 1 lemon, garlic, oregano, 1 teaspoon salt, and several grinds of black pepper. Toss to coat and marinate at room temperature for 15 minutes.
  2. While chicken marinates, combine chickpeas, cherry tomatoes, cucumber, red onion, and parsley in a large mixing bowl. Add juice of 1 lemon, 2 tablespoons olive oil, 1/2 teaspoon salt, and black pepper. Toss well; set aside.
  3. Heat a large grill pan or outdoor grill over medium-high. Once hot, grill chicken for 5-6 minutes per side, or until cooked through and juices run clear. Let rest 5 minutes, then slice thinly.
  4. Divide chickpea salad among 4 bowls. Top each with sliced grilled chicken and sprinkle with feta cheese.
  5. Drizzle with extra olive oil if desired, garnish with more parsley, and serve warm or at room temperature.
