  1. Preheat oven to 400°F (205°C). Spray a large baking dish with nonstick spray or lightly grease with 1 tsp olive oil.
  2. In the prepared dish, scatter the sliced onions and bell peppers evenly. Sprinkle with half the smoked paprika, garlic powder, salt, and black pepper.
  3. Lay chicken breasts on top of the vegetables. Season chicken with remaining smoked paprika, garlic powder, salt, and black pepper. Brush chicken generously with BBQ sauce, reserving 1/4 cup.
  4. Scatter drained cannellini beans around the chicken in the dish. Drizzle the beans and vegetables with the remaining BBQ sauce. Toss gently to coat but keep chicken mostly covered with sauce.
  5. Bake uncovered for 28-32 minutes, until chicken is cooked through (internal temp 165°F/74°C).
  6. Remove from oven and immediately scatter baby spinach over the hot dish, gently folding it into the beans and veggies until just wilted. Let rest 3-5 minutes before serving.
  7. Slice the chicken breasts and serve each portion with plenty of beans and veggies, spooning extra sauce from the pan over the top.
