  2. Pat the chicken backs dry with paper towels. Rub all over with olive oil, salt, pepper, smoked paprika, garlic powder, and onion powder.
  3. Arrange the onion slices, carrots, and celery in the bottom of a large roasting pan or ovenproof skillet. Pour the chicken broth over the vegetables.
  4. Nestle the chicken backs on top of the vegetables, skin side up. Tuck lemon slices and rosemary sprigs around the chicken.
  5. Roast in the oven for 30-35 minutes, or until the chicken is deep golden brown and the meat is cooked through (internal temperature at least 165°F/74°C).
