  1. In a medium bowl, whisk together peanut butter, soy sauce, fish sauce, honey, lime juice, sriracha, garlic, ginger, and vegetable oil. Add warm water, a tablespoon at a time, until the marinade is smooth and pourable.
  2. Season chicken cubes lightly with salt and pepper. Add chicken to the marinade and toss to coat thoroughly. Cover and marinate in the fridge for at least 20 minutes (up to 1 hour for deeper flavor).
  3. If using wooden skewers, soak them in water for 15 minutes. Thread marinated chicken onto skewers.
  4. Preheat a grill or grill pan over high heat. Once hot, char chicken skewers for 3–4 minutes per side, turning to get deep color and grill marks, until cooked through and slightly caramelized at the edges.
  5. Transfer skewers to a serving platter. Sprinkle with chopped cilantro and roasted peanuts if desired. Serve with lime wedges for squeezing over the top.
