  2. In a small bowl, whisk together soy sauce, honey, ginger, lime juice, lime zest, and garlic. Pat salmon fillets dry, season lightly with salt and pepper, and place on the prepared baking sheet. Brush salmon generously with the ginger-lime glaze.
  3. Bake salmon for 12–15 minutes, or until cooked through and flaky. Reserve any extra glaze.
  4. While salmon bakes, heat sesame oil in a large skillet or wok over medium-high. Add snap peas and bell pepper; stir-fry for 3–4 minutes until crisp-tender.
  5. Add most of the scallions to the skillet, season with a pinch of salt, and cook 1 more minute. Remove from heat.
  6. Serve salmon fillets over a bed of jasmine rice. Top with extra glaze, sesame seeds, and remaining scallions. Serve with stir-fried vegetables on the side.
