  1. Pat steaks dry with paper towels. Rub both sides with 1 tbsp olive oil, salt, pepper, and smoked paprika. Let rest at room temperature while prepping spinach.
  2. Heat a large cast iron or heavy skillet over medium-high heat. Add steaks and sear 3-4 minutes per side for medium-rare, or to desired doneness. Transfer steaks to a plate, tent loosely with foil, and rest while making spinach.
  3. Lower heat to medium. Add remaining 1 tbsp olive oil and butter to skillet. Sauté garlic for 30 seconds until fragrant, then add spinach and cook, stirring, until wilted, 1-2 minutes.
  4. Pour in heavy cream and simmer 1 minute, then stir in Parmesan and crushed red pepper (if using). Simmer until sauce thickens, 1-2 minutes. Adjust seasoning as needed.
  5. Slice rested steaks against the grain. Plate with creamy garlic spinach, spooning sauce over. Garnish with parsley and serve immediately.
