  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and set a wire rack on top. Spray with nonstick spray.
  2. Pat chicken dry. Set out 3 shallow bowls: one with flour, one with beaten eggs, and one with a mix of panko, cheddar, 1/2 tsp salt, and 1/4 tsp pepper.
  3. Dredge each chicken breast in flour, dip in egg, and press firmly into cheddar-panko mix, coating both sides. Arrange on prepared rack.
  4. Bake chicken for 22-25 minutes, or until golden and internal temp is 165°F (74°C).
  5. Meanwhile, place potatoes in a pot and cover with salted water. Bring to a boil and cook 12-15 minutes, until fork-tender. Drain and return to pot. Add butter, milk, garlic, 1/2 tsp salt, and mash until smooth and creamy. Cover to keep warm.
  6. While potatoes cook, toss green beans with olive oil, salt, and pepper. Spread on a second baking sheet and roast in oven for 12-15 minutes until crisp-tender.
  7. Serve chicken with a scoop of garlic mashed potatoes and roasted green beans.
