  1. Pat chicken breasts dry and season both sides with salt, pepper, oregano, rosemary, and smoked paprika.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 4-5 minutes per side until golden and nearly cooked through. Work in batches if needed, adding more oil as necessary.
  3. Reduce heat to medium. Add garlic and lemon zest to the pan, stirring for 30 seconds until fragrant.
  4. Return all chicken to the skillet. Squeeze in lemon juice and add 1/4 cup water. Cover and simmer for 5 minutes, until chicken is cooked through and juices run clear (internal temp 165°F).
  5. Remove chicken from skillet and set aside, lightly tented with foil. Add spinach to the skillet and toss just until wilted, about 1-2 minutes.
  6. Return chicken on top of spinach, sprinkle with feta, and cover for 1 minute to gently warm the cheese.
  7. Serve each plate with two chicken breasts atop a generous portion of garlicky spinach, spooning pan juices and feta over the top.
