  1. In a small bowl, whisk together soy sauce, grated ginger, minced garlic, honey, rice vinegar, and sesame oil for the marinade/sauce.
  2. Slice chicken breasts into bite-size pieces. In a large bowl, combine chicken with half the marinade and let sit for 10 minutes while prepping vegetables.
  3. Heat 1 tbsp olive oil in a large nonstick skillet over medium-high heat. Add chicken pieces (let excess marinade drip off) and cook, stirring occasionally, until golden and cooked through, 6-8 minutes. Remove chicken and set aside.
  4. Add remaining olive oil to skillet. Add broccoli florets and bell pepper; stir-fry for 3-4 minutes until crisp-tender. Add edamame and cook 1 more minute.
  5. Return cooked chicken to the pan with veggies. Pour in the reserved marinade/sauce and stir-fry everything together for 2-3 minutes, allowing flavors to meld and sauce to thicken slightly.
  6. Divide cooked brown rice among 4 bowls. Top each with chicken-veggie mixture. Garnish with green onions and sesame seeds before serving.
