  1. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add chopped spinach and sauté for 1-2 minutes until wilted. Remove and set aside.
  2. Add another tablespoon olive oil to the skillet. Crack in the eggs and cook to your preferred doneness (sunny side up or over-easy recommended). Sprinkle with salt, pepper, and smoked paprika.
  3. While eggs cook, toast the whole grain bread slices until golden and crisp.
  4. Spread a spoonful of Greek yogurt on each toast. Top with sautéed spinach, halved cherry tomatoes, and crumbled feta.
  5. Place cooked eggs on top of the prepared toasts. Garnish with avocado slices and chopped chives.
  6. Serve immediately, accompanied by extra Greek yogurt on the side if desired.
