  1. In a small bowl, combine the red onion, red wine vinegar, sugar, and 1/4 tsp salt. Toss and let sit for at least 20 minutes to quick-pickle.
  2. In a large bowl, mix ground lamb, panko, mint, parsley, cumin, coriander, kosher salt, and black pepper until just combined. Form into 4 burger patties.
  3. In another bowl, mash together feta, Greek yogurt, dill, lemon juice, and 1 tbsp olive oil to create a creamy herbed spread. Set aside.
