Ingredients
Instructions
  1. Prepare your campfire or preheat a grill to medium-high heat (about 400°F).
  2. Cut two large sheets of heavy-duty aluminum foil (about 18 inches each).
  3. In a large bowl, combine the sliced chicken, bell peppers, and onion. Drizzle with olive oil.
  4. In a small bowl, mix together the chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using).
  5. Sprinkle the fajita seasoning over the chicken and vegetables. Toss until everything is evenly coated.
  6. Divide the chicken and veggie mixture evenly between the two foil sheets, placing it in the center of each.
  7. Fold the sides of the foil over the filling and seal the packets tightly, making sure there are no gaps for steam to escape.
  8. Place the foil packets directly on hot campfire coals or on the grill. Cook for 15–20 minutes, turning halfway, until the chicken is cooked through and vegetables are tender.
  9. While the packets cook, wrap tortillas in foil and warm them over the campfire or grill for the last 5 minutes of cooking.
  10. Carefully open the foil packs (watch out for steam!). Sprinkle with fresh cilantro.
  11. Serve the sizzling fajita mixture in warm tortillas. Squeeze lime wedges over the top, add avocado slices, and spoon on your favorite salsa. Enjoy by the fire!
