  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Season chicken pieces with salt and pepper. Add to skillet in a single layer; cook undisturbed for 3 minutes to brown, then stir and cook until lightly golden and cooked through, 4-5 minutes total. Transfer chicken to a plate.
  2. Add remaining 1 tbsp olive oil to the skillet. Add onion and sauté 2-3 minutes until translucent. Stir in garlic, oregano, basil, and red pepper flakes; cook 30 seconds until fragrant.
  3. Add cherry tomatoes; sauté 2-3 minutes until they begin to soften. Add cannellini beans and return chicken (plus any juices) to skillet. Toss well to combine.
  4. Add spinach by handfuls, stirring gently, until just wilted, about 2 minutes. Squeeze lemon juice over the skillet and season to taste with salt and pepper.
  5. Serve warm, making sure each portion gets plenty of chicken, beans, spinach, and tomatoes. Drizzle with a little extra olive oil if desired.
