  1. Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or foil.
  2. Pat chicken thighs dry with paper towels. Place them on the prepared baking sheet. Drizzle with 1 tbsp olive oil, sprinkle with 1 tsp salt and black pepper, then rub the za’atar all over the chicken, including under the skin if possible.
  3. Roast the chicken, skin side up, for 30-35 minutes or until golden, crisp, and the internal temperature reaches 170°F (77°C). For extra crispy skin, broil for the last 2-3 minutes.
  4. Meanwhile, toss sliced onions with sumac, lemon juice, sugar, 1/2 tbsp olive oil, and 1/2 tsp salt in a bowl. Gently massage until onions soften and turn vibrantly pink. Let sit while chicken roasts.
  5. Prepare the yogurt-cucumber dip: In a small bowl, combine Greek yogurt, diced cucumber, grated garlic, remaining olive oil, dill, and mint (if using). Season with a pinch of salt. Stir to blend and refrigerate until serving.
  6. Warm flatbread in the oven during the last 2-3 minutes of roasting.
  7. To serve: Arrange za’atar chicken thighs on a platter. Top generously with sumac onions and scatter with pomegranate seeds. Serve alongside warm flatbread and yogurt-cucumber dip. Offer lemon wedges for squeezing.
