Pat chicken breast and shrimp dry, then cut chicken into bite-sized pieces. Season both generously with salt early to penetrate the meat, enhancing flavor and tenderness.
In a large bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic. Reserve 1/3 of the marinade for drizzling later. Add chicken and shrimp to the remaining marinade, toss, and let sit for 10 minutes while prepping vegetables.
Heat a large nonstick skillet or wok over medium-high heat. Add marinated chicken pieces (in batches if necessary) and sear until golden and cooked through, about 6-8 minutes. Remove and set aside.
