  1. Separate the eggs, placing yolks in one bowl and whites in another.
  2. Melt the chocolate gently in a heatproof bowl over simmering water or in the microwave in 20-second bursts. Let it cool slightly.
  3. Whisk the egg yolks with sugar and vanilla extract (if using) until pale and slightly thickened.
  4. Slowly whisk the melted chocolate into the yolk mixture until smooth.
  5. Add a pinch of salt to the egg whites and beat until stiff peaks form.
  6. Gently fold one-third of the whipped egg whites into the chocolate mixture to loosen it, then fold in the rest until just combined. Be careful not to deflate the mixture.
  7. Spoon the mousse into serving glasses or bowls. Chill in the refrigerator for at least 2 hours to set.
