In a small bowl, mix soy sauce, oyster sauce, rice vinegar, sesame oil, cornstarch, and water to make the stir-fry sauce. Set aside.
Season sliced chicken lightly with salt and pepper. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until just cooked through, about 4-5 minutes. Remove to a plate.
Add remaining 1 tbsp oil to the pan. Add garlic and ginger, stir-frying for 30 seconds until fragrant.
