Inspired by the sunny spirit of Idaho and Mexican-American party food, these Grilled Turkey Picadillo Tostadas bring bold flavor and crave-worthy textures to your dinner table. Ground turkey is seasoned and grilled over high heat for maximum browning, then simmered with aromatic spices and tomato sauce. The real magic is in the cheese: melty Oaxaca atop crisp corn tostadas, finished with a shower of fresh toppings and a squeeze of lime. This dish is festive, easy, and a fresh take on summer grilling—perfect for smoky evenings and good company.

Instructions
  1. Preheat a grill pan or cast iron skillet over high heat. In a bowl, season ground turkey with salt, pepper, cumin, and smoked paprika. Toss to coat evenly.
  2. Add the seasoned turkey to the hot pan and cook, breaking up with a spatula, until just beginning to brown, about 3-4 minutes. Push turkey to the side, add onion and garlic, and cook until softened, 2 minutes.
  3. Stir onion and garlic into turkey. Add tomato sauce and water. Simmer until thickened and turkey is cooked through, about 5-6 minutes. Remove from heat.
  4. Lay tostadas on a baking sheet. Sprinkle Oaxaca cheese evenly on each. Broil for 1-2 minutes until cheese is melted and bubbly.
  5. Top each cheesy tostada with a generous scoop of turkey picadillo. Layer with shredded lettuce, diced tomato, cotija cheese, and cilantro.
  6. Serve immediately with lime wedges for squeezing.
