Instructions
  1. Place sweet potatoes in a medium saucepan, cover with water, and add a pinch of salt. Bring to a boil, then simmer for 12-15 minutes until fork-tender. Drain and set aside.
  2. While sweet potatoes cook, heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3 minutes until translucent. Add garlic and cook for 30 seconds more.
  3. Add ground turkey to the skillet. Season with smoked paprika, thyme, salt, and pepper. Cook for 4-5 minutes, breaking it up with a spatula, until browned and mostly cooked through.
  4. Add broccoli and bell pepper to the skillet. Pour in chicken broth. Cover and cook for 5-7 minutes until vegetables are tender and turkey is fully cooked.
  5. Meanwhile, mash the drained sweet potatoes with Greek yogurt, salt, and pepper until creamy. Taste and adjust seasoning as needed.
  6. Serve the turkey and veggie mixture over a bed of sweet potato mash. Garnish with fresh parsley if desired.
