  1. Prep all vegetables and aromatics so they’re ready to add quickly. Dry thoroughly to avoid steaming.
  2. Heat a large wok or heavy skillet over high heat until just smoking. Add avocado oil, swirling to coat.
  3. Add garlic and ginger; stir-fry for 15 seconds until fragrant.
  4. Add carrot and broccoli, tossing constantly for 2 minutes to develop a bit of char.
  5. Add bell pepper, squash, and snap peas. Continue tossing in a forward scooping motion, maintaining high heat. Stir-fry 3-4 minutes until vegetables are crisp-tender and beginning to blister.
  6. Season with salt and black pepper. Drizzle rice vinegar around the sides of the wok to deglaze, tossing vigorously to coat.
