  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together oats, protein powder, whole wheat flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together applesauce, melted coconut oil, brown sugar, egg, and vanilla extract until smooth.
  4. Add wet ingredients to dry ingredients and mix until just combined. Fold in chocolate chips and walnuts, if using.
  5. Scoop 2-tablespoon portions of dough onto the prepared baking sheet, spacing 2 inches apart. Flatten slightly with your fingers or the back of a spoon.
