  2. Season chicken pieces with salt, pepper, smoked paprika, and dried thyme. Add chicken to the skillet in a single layer. Sear undisturbed for 3-4 minutes, then stir and cook another 2-3 minutes until golden and just cooked through. Transfer chicken to a plate and cover.
  3. Add remaining 1 tbsp olive oil to the same skillet. Stir in diced onion and cook for 2 minutes until just softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add cauliflower florets to the skillet. Toss well, then cover and let steam for 5-6 minutes, stirring occasionally, until cauliflower is tender and golden in spots.
  5. Return chicken (and any juices) to the skillet and toss everything together. Sprinkle shredded cheddar evenly over the top. Cover and cook for 2 minutes, until cheese is melted.
  6. Serve hot, topped with fresh chopped parsley if desired.
