  5. After 15 minutes, remove the rice from heat and let it sit, covered, for 10 minutes.
  6. Fluff the rice with a fork. Stir in the lime zest, lime juice, and half of the toasted coconut flakes.
  7. Transfer to a serving bowl. Top with the remaining toasted coconut flakes and chopped cilantro, if using.
