Ingredients
Instructions
  1. Preheat your grill or a grill pan over medium-high heat. While heating, pat chicken breasts dry with paper towels.
  2. In a small bowl, combine cumin, smoked paprika, chili powder, garlic powder, salt, and black pepper. Rub this spice mixture all over the chicken breasts.
  3. Lightly brush both sides of the bell peppers and onion rounds with 1 tbsp olive oil. Place peppers and onions directly over the flames and char until nicely blackened and tender, about 3-4 minutes per side. Remove and set aside.
  4. Brush chicken with remaining olive oil. Grill chicken for 6-7 minutes per side, or until cooked through (internal temperature of 165°F) and well-charred. Let rest for 5 minutes, then slice thickly.
  5. While chicken cooks, warm black beans in a saucepan over low heat until heated through.
  6. Assemble each bowl: Divide black beans among 4 bowls. Top with sliced grilled chicken, charred peppers, and onions. Add a dollop of Greek yogurt, a lime wedge, and scatter with cilantro.
  7. Serve immediately, squeezing lime over everything just before eating for extra brightness.
