  3. Toss green beans with remaining 1 tbsp olive oil, minced garlic, 1/2 tsp salt, and 1/4 tsp pepper. Spread green beans on the other half of the baking sheet. Roast chicken and beans for 22-25 minutes, or until chicken reaches 165°F (74°C) and beans are tender-crisp.
  4. Meanwhile, place sweet potato cubes in a large pot, cover with water, and bring to a boil. Reduce heat and simmer 12-15 minutes until fork-tender. Drain well.
