This vibrant sheet pan meal brings together rich, omega-3-packed salmon, crispy roasted broccoli, and protein-dense edamame—all bathed in a glossy homemade teriyaki glaze. The sweet-salty sauce is brightened with fresh ginger, garlic, and citrus, while sesame oil lends a nutty depth. High heat roasting delivers perfectly tender salmon and deeply caramelized broccoli florets for a beautiful contrast of textures. With 50g of protein per serving, it’s a power-packed, one-pan dinner that feels both healthy and indulgent—perfect for busy California evenings. Finish with scallions, sesame, and a squeeze of lemon for a truly fresh finish.

Instructions
  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil.
  2. In a small saucepan, combine soy sauce, honey, sesame oil, rice vinegar, ginger, and garlic over medium heat. Bring to a simmer.
  3. Stir cornstarch with 1/2 tbsp water in a small bowl to make a slurry. Add to saucepan, whisking, and simmer until glossy and slightly thickened (about 1 minute). Remove from heat.
  4. Pat salmon dry and place on one side of the sheet pan. Brush generously with half of the teriyaki sauce.
  5. Toss broccoli florets with neutral oil, salt, and pepper. Arrange on the other side of the pan. Scatter edamame over and around broccoli.
  6. Roast for 13-15 minutes, until salmon is cooked through and broccoli is crisp-tender with golden edges.
  7. Brush remaining teriyaki sauce over salmon. (Optional: Broil for 1 minute for extra caramelization.)
  8. Transfer salmon, broccoli, and edamame to a plate. Serve with steamed jasmine rice if desired.
  9. Garnish with scallions, sesame seeds, and a squeeze of fresh lemon.
