Place potatoes in a saucepan, cover with water, add a pinch of salt, and bring to a boil. Simmer until tender, about 15 minutes.
While potatoes cook, heat 1 tbsp olive oil in a large skillet over medium heat. Season chicken with salt, pepper, thyme, and smoked paprika. Sear chicken thighs 3-4 minutes per side until golden and mostly cooked through. Remove to a plate.
