  1. In a large bowl, whisk together 1 tbsp olive oil, lemon zest and juice, garlic, oregano, smoked paprika, salt, and pepper. Add chicken breasts, toss to coat, and marinate for at least 10 minutes (while you prep other ingredients).
  2. Rinse quinoa under cold water. Combine quinoa and chicken broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, until liquid is absorbed. Remove from heat and let stand 5 minutes, then fluff with a fork.
  3. While quinoa cooks, heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add marinated chicken breasts and cook 5-6 minutes per side, or until golden and cooked through (internal temp 165°F). Rest 3 minutes, then slice thinly.
  4. In a bowl, toss diced cucumber, cherry tomatoes, olives, and red onion.
  5. To assemble, divide quinoa among 4 bowls. Top each with sliced chicken, veggie mixture, feta cheese, and chopped parsley. Serve with extra lemon wedges if desired.
