This Colombian-Korean arepa bulgogi sandwich fuses crisp-edged, tender arepas with sweet-spicy bulgogi beef and punchy kimchi for a flavor-packed, hand-held meal. Inspired by the principle of flavor bridges, the arepa’s mild corn notes mellow the bold gochujang and kimchi, while creamy avocado and scallion add freshness. With only a handful of ingredients, this dish brings together the best of both cultures—chewy, golden arepas as the perfect canvas for juicy, umami-rich beef and tangy Korean condiments. Perfect for an adventurous weeknight dinner or a unique party snack, each bite balances comfort, crunch, and vibrant taste.

Instructions
  1. In a bowl, mix arepa flour, salt, and warm water. Stir until dough forms, then knead briefly. Divide into 4 pieces, shape into 1/2-inch thick discs.
  2. Heat a nonstick or cast iron skillet over medium. Cook arepas 5-6 minutes per side until golden and set. Split arepas horizontally to form sandwich buns. Set aside.
  3. In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang. Add beef, toss to coat, and marinate for 10 minutes (or up to 1 hour for more flavor).
  4. Heat a skillet over high. Add beef and onions, stir-fry 2-3 minutes until beef is browned and onions are tender. Remove from heat.
  5. To assemble: Layer bulgogi beef with onions, chopped kimchi, scallions, and avocado slices (if using) inside each arepa bun. Serve warm.
