  1. Cook the jasmine rice according to package instructions. While rice cooks, prep the vegetables and salmon.
  2. In a small bowl, whisk together soy sauce, honey, ginger, garlic, rice vinegar, and toasted sesame oil to create the glaze.
  3. Heat vegetable oil in a large nonstick skillet over medium-high heat. Season salmon fillets lightly with salt and pepper. Sear salmon, skin-side down, 3-4 minutes. Flip and cook another 2 minutes.
  4. Pour the glaze over the salmon in the skillet. Let simmer and reduce, spooning sauce over fish, for 2-3 minutes, until salmon is cooked through and glaze thickens.
  5. Remove salmon; in the same skillet, add broccoli, bell pepper, and carrots. Stir-fry for 3-4 minutes until crisp-tender. Add green onions and sesame seeds; toss to combine.
  6. To assemble, divide rice among 4 bowls. Top each with a salmon fillet and glazed veggies. Drizzle any extra sauce from the pan over the bowls. Sprinkle with additional sesame seeds if desired.
