  1. Heat olive oil in a large pot over medium heat. Add the onion, carrot, and celery. Sauté for 5-7 minutes until softened and fragrant.
  2. Add garlic, sun-dried tomatoes, smoked paprika, thyme, oregano, and red pepper flakes. Stir for 1 minute until the spices are fragrant.
  3. Add dried lentils and stir to coat in the aromatics. Pour in the vegetable broth or water and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 25-30 minutes, stirring occasionally, until lentils are tender and most of the liquid is absorbed.
  5. Stir in roasted red peppers and olives. Simmer uncovered for 5 more minutes to blend flavors. Season with salt and pepper to taste.
  6. Remove from heat and stir in lemon juice. Ladle into bowls and garnish with chopped parsley.
