  1. Bring a large pot of salted water to a boil. Cook rigatoni until just al dente, about 1-2 minutes less than package instructions. Reserve 1 cup pasta water, then drain pasta.
  2. While pasta cooks, heat olive oil in a large sauté pan over medium heat. Add onion and sauté 2-3 minutes until softened. Add garlic and red pepper flakes (if using), cook 30 seconds more.
  3. Add chicken sausage, breaking it up with a spoon. Sauté until browned and cooked through, about 5-6 minutes.
  4. Pour in crushed tomatoes. Season with salt and pepper. Simmer, stirring occasionally, for 8-10 minutes to let the flavors meld.
  5. Stir in baby spinach and cook until wilted, about 2 minutes.
  6. Add drained rigatoni to the sauce. Toss vigorously, adding reserved pasta water a little at a time to help the sauce cling to the pasta.
  7. Remove from heat and stir in half the Parmigiano. Serve hot, topped with the remaining cheese and a drizzle of good olive oil.
