  1. Pat chicken breasts dry and season them generously with salt and black pepper on both sides.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken breasts and sear until golden brown and edges begin to char, about 4-5 minutes per side (chicken will finish cooking later). Remove to a plate.
  3. In the same skillet, add the remaining 1 tbsp olive oil, onions, and a pinch of salt. Sauté until onions soften and start to caramelize, 4-5 minutes. Add garlic and cook 1 more minute until fragrant.
  4. Add drained diced tomatoes, cannellini beans, olives, capers, and crushed red pepper flakes (if using). Stir to combine, scraping up any browned bits from the pan for extra flavor.
  5. Return chicken breasts and their juices to the skillet, nestling them into the bean mixture. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until chicken is cooked through (internal temp 165°F).
