  1. In a large bowl, dissolve 1/4 cup kosher salt in 4 cups water. Add chicken breasts and brine for 15 minutes, then drain and pat dry.
  2. While chicken brines, bring a large pot of salted water to a boil. Add potatoes and cook for 15-18 minutes until fork-tender. Drain well.
  3. Meanwhile, heat 1 tbsp olive oil in a large skillet over medium-high heat. Season chicken with pepper, paprika, and garlic powder. Sear chicken for 4-5 minutes per side until golden and cooked through (internal temp 165°F). Remove and rest, tented with foil.
  4. Return drained potatoes to the pot. Add butter, milk, and half the minced garlic. Mash until smooth. Season with salt and pepper to taste.
  5. Wipe out skillet and add remaining 1 tbsp olive oil over medium heat. Add green beans and sauté 2 minutes. Add remaining garlic and cook 2 minutes more until beans are crisp-tender. Squeeze lemon juice over beans. Season with salt and pepper.
  6. Slice chicken and serve alongside garlic mashed potatoes and lemony green beans.
