Place eggs in a saucepan and cover with cold water. Bring to a boil, then immediately cover, remove from heat, and let sit for 10 minutes. Transfer eggs to an ice bath for 5 minutes, then peel.
Cut eggs in half lengthwise. Carefully remove yolks and place them in a medium bowl; set whites aside on a serving platter.
